La crescentina
La “crescentina” è una semplice focaccia di ascendenze latine tipica della provincia modenese ed in particolare di Pavullo. Da molti la “crescentina” viene chiamata “tigella”, dal nome dello strumento utilizzato anticamente per cuocerla. I dischi di terra, realizzati con argilla resistente alle alte temperature, erano incisi per decorare le facce del prodotto: tra le figure più comuni una stella a sei punte, ma nelle case più nobili vi si riportavano addirittura gli stemmi familiari. Questi dischi venivano sovrapposti accanto al fuoco del camino in pile piuttosto alte, alternando alle tigelle pasta e foglie di castagno che servivano a cedere aroma e umidità alla crescentina.

A Pavullo ogni ultima domenica del mese di agosto si tiene la Festa della Crescentina, tradizionale appuntamento con il prodotto tipico del nostro territorio, organizzata dall’Associazione Turistica Pro-Loco, con il patrocinio dell’Amministrazione Comunale.

Numerosi stands dei gruppi frazionali occupano tutto il centro della cittadina e sfornano crescentine che, con il loro sapore semplice e la caratteristica fragranza, sono l’ideale e goloso accompagnamento di rustici piatti a base di salumi, formaggi e pesto.

Ingredienti

1 kg di farina
½ cubetto di lievito di birra, sale, latte fresco intero e acqua in parti uguali

Sciogliere il lievito in acqua tiepida e fare un impasto abbastanza solido lavorandolo bene, lasciarlo riposare per due o tre ore. Lavorarlo di nuovo e fare delle palline: schiacciarle, tirarle con il matterello e cuocerle.

Il borlengo
Il borlengo è una specie di crêpe molto sottile e croccante preparata a partire da un impasto liquido estremamente semplice (è un tipico cibo povero), a base di acqua, farina e sale: questo impasto è detto “colla”. Il ripieno tradizionale, detto “cunza”, consiste in un battuto di lardo, aglio e rosmarino, oltre ad una spolverata di parmigiano reggiano. Il borlengo si serve molto caldo. La sua origine è decisamente antica: i primi documenti certi risalgono al 1266 ma c’è chi la fa risalire addirittura al Neolitico.

Ingredienti:
1 kg di farina 00
1 cucchiaio di sale
2 cucchiai di olio
acqua q.b.

Preparate con la farina, l’acqua, l’olio e il sale la soluzione densa denominata “colla”. Mettete sul fuoco vivo una padella larga dopo averne unto bene il fondo con una noce di burro e versatevi una cucchiaiata di “colla” stendendola velocemente su tutta la superficie. Dopo pochi secondi (30-40) girate il borlengo per cuocerlo anche dall’altra parte. Per questa delicata operazione (il borlengo è fragilissimo) o vi aiutate con una paletta da cucina o fate saltare in aria la sottilissima sfoglia dorata. Altri 20-30 secondi e questa gustosissima “ostia” appena abbrustolita è pronta da servire in tavola. Se invece possedete le piastre adatte alla cottura, larghi cerchi di metallo denominati “cottole”, tutto sarà più semplice. Il segreto, comunque, consiste nel far colare in maniera uniforme la “colla” cuocendola velocemente. Tolto dal fuoco il borlengo viene condito al centro con lardo tritato mescolato ad aglio e rosmarino e cosparso di formaggio parmigiano-reggiano grattugiato. Piegato in quattro, si mangia in pochi bocconi finché è caldissimo.

L’erbazzone dolce
Con lo sbattitore elettrico lavorare la ricotta insieme allo zucchero, poi aggiungere (una per volta) le uova, le mandorle (sbucciate, asciugate o tostate in forno e tritate), il liquore e la vanillina.Fare riposare il composto per 2-3 ore.Unire gli spinaci precedentemente lavati, tritati crudi, passati al burro per farli cuocere, quindi raffreddati.Versare il composto in una teglia imburrata e foderata di pasta frolla. Cuocere in forno a calore medio per 50 minuti.

500 g di ricotta
270-300 g di zucchero
4 uova
200-250 g di spinaci
200 g di mandorle
1 bicchierino di Rum
1 bicchierino di Cointreau
1 bustina di vanillina
(facoltativi) 100 g di amaretti
pasta frolla

The Crescentina
The “crescentina” is a simple focaccia bread of Latin ancestry typical of the province of Modena and in particular of Pavullo. By many, “crescentina” is called “tigella”, from the name of the tool used in ancient times to cook it. The earth discs, made with clay resistant to high temperatures, were engraved to decorate the faces of the product: among the most common figures was a six-pointed star, but in the noblest houses there were even family coats of arms. These discs were superimposed next to the fireplace in rather tall piles, alternating with the tigelle paste and chestnut leaves on the griddles, which served to impart flavor and moisture to the crescentina.

In Pavullo every last weekend of August the Crescentina Festival is held, a traditional event with the typical product of our territory, organized by the Pro-Loco Tourist Association, under the patronage of the Municipal Administration.
There are numerous stands from local groups that occupy the entire town center and churn out crescentine, which, with their simple flavor and distinctive fragrance, are the perfect and delicious accompaniment to rustic dishes featuring cold cuts, cheeses and lardo.

Ingredients:
1 kg of flour
½ cube of brewer’s yeast, salt, whole fresh milk and water in equal parts.

Dissolve the yeast in warm water and make a fairly solid dough by working it well, let it rest for two or three hours. Work it again and make balls: crush them, pull them with a rolling pin and cook them.

The borlengo
Borlengo is a kind of very thin and crunchy crêpe prepared from an extremely simple liquid dough (it is a typical poor food), based on water, flour and salt: this dough is called “colla”. The traditional filling, called “cunza”, consists of a lard paste, garlic and rosemary, as well as a sprinkling of Parmigiano Reggiano. The borlengo is served very hot. Its origin is decidedly ancient: the first certain documents date back to 1266 but there are those who even date it back to the Neolithic.

Ingredients:
1 kg of 00 flour
1 tablespoon of salt
2 tablespoons of oil
water q.b.

Prepare with flour, water, oil and salt the dense solution called “colla”. Put a large frying pan on the live fire after greased the bottom well with a knob butter and pou a spoonful of “colla” spreading it quickly over the entire surface. After a few seconds (30-40) turn the borlengo to cook it on the other side as well. For this delicate operation (the borlengo is very fragile) either help yourself with a kitchen scoop or blow up the very thin golden sheet. Another 20-30 seconds and this tasty “ostia” freshly toasted is ready to serve on the table. If, on the other hand, you have the plates suitable for cooking, wide metal circles called “cottole”, everything will be easier. The secret, however, is to make the “colla” flow evenly by cooking it quickly. Removed from the heat, the borlengo is seasoned in the center with chopped lard mixed with garlic and rosemary and sprinkled with grated Parmigiano-Reggiano cheese. Folded in four, you can eat in a few bites while it is very hot.

Erbazzone (Sweet)
Ingredients
For the filling:
500 g of ricotta
270-300 g of sugar
4 eggs
200-250 g of spinach
200 g of almonds
1 small glass of Rum
1 shot of Cointreau
1 sachet of vanillin
(optional) 100 g of amaretti biscuits
shortcrust pastry

With the electric mixer work the ricotta together with the sugar, then add (one at a time) the eggs, almonds (peeled, dried or toasted in the oven and chopped), the liqueur and the vanillin. Let the mixture rest for 2-3 hours. Add the previously washed spinach, chopped raw, passed to the butter to cook them, then cooled. Pour the mixture into a buttered baking pan lined with shortcrust pastry. Bake in the oven at medium heat for 50 minutes.
